Virgin Mojito (My Favorite):

Ingredients:

  • 1 Lime
  • 15 mint leaves
  • 1 oz lime juice, fresh
  • ½ oz simple syrup
  • 4 oz club soda

Directions:

  • Add mint leaves, lime juice, and simple syrup to glass. Muddle mint leaves gently.
  • Add as much ice as desired, then top with club soda. Stir lightly to combine. Garnish with lime wedges (optional) and enjoy.

 

Strawberry-Ginger Lemonade

Ingredients:

  • 3 strawberries, hulled
  • 4 oz Lemon-ginger brew (recipe below)
  • Lemon slice (for serving)

Directions:

  1. Muddle Strawberries in highball glass
  2. Add Lemon-Ginger Brew and stir well
  3. Fill glass with ice and garnish with lemon slice

PART 2: Lemon Ginger brew (Make ahead!)

 

Ingredients:

  • 8 oz ginger, peeled, chopped
  • 1/2 c fresh lemon juice
  • 1/3 agave syrup (nectar) or pure maple syrup * (my fav)

Directions:

  1. Pulse ginger in food processor to coarse paste (or finely grate it).
  2. Bring ginger and 6 cups of water to boil in medium saucepan; reduce heat and simmer until reduced to 3 cups (30-40 mins).
  3. Strain into large jar and mix in lemon juice and agave. Let cool, cover and chill.

*Brew can be made up to 2 weeks ahead. Keep chilled.
